Changes in blood biochemical parameters during the transition from a traditional (omnivorous) to a vegan diet
Abstract
In recent years, vegan diets have been gaining increasing popularity due to growing interest in healthy lifestyles and the prevention of chronic non-communicable diseases. Changes in dietary composition associated with the exclusion of animal-derived foods may influence metabolic processes and blood biochemical parameters. This study assessed changes in blood biochemical parameters by comparing laboratory results obtained before and after the transition from a traditional omnivorous diet to a vegan diet. Participants of different ages, both with and without chronic diseases, were included in the study. The biochemical profile comprised markers of carbohydrate and protein metabolism, lipid profile parameters, indicators of liver and kidney function, and enzyme activity. The aim of the study was to characterize changes in these parameters following the transition to a vegan diet and to improve the understanding of the body’s biochemical responses to dietary changes in a heterogeneous study population.
